HERMANTOWN, MN — What started as a side hustle in a home kitchen has blossomed into a thriving business for Amy Sirois and her husband, Michael, as they unveil their new food truck for The Minnesota Marshmallow. This exciting expansion marks a significant milestone for the couple, who have been crafting unique marshmallow flavors since 2020.
Amy, who initially juggled her marshmallow-making venture with a full-time recruitment role at the Minnesota Air National Guard’s 148th Fighter Wing, recalls the early days filled with sleepless nights and powdered sugar dusting every surface of her home. “It took off like wildfire,” she said, reflecting on her first event that drew rave reviews.
As demand surged, Michael joined the operation, managing logistics and bookkeeping while maintaining his full-time job. “He is definitely the magician behind the scenes,” Amy said, highlighting his crucial role in their growing enterprise.
The couple’s family has also expanded, welcoming a son in 2022 and expecting a daughter soon. “Every day is crazy,” Amy admitted. “We are always looking for that next step and that next thing.”
With over 80 flavors crafted from scratch, The Minnesota Marshmallow has transitioned from a home-based operation to a commercial kitchen, allowing for wholesale partnerships and shipping orders as far as Japan and New Zealand. The recent acquisition of a food truck opens new avenues for catering and special events, including collaborations with local organizations like the Veteran Resilience Project and Lake Superior Zoo.
The food truck features five deep-fried signature flavors, including seasonal delights like caramel apple marshmallow deep-fried in cinnamon batter. “Although it’s more expensive running the food truck, it’s less prep time in the kitchen,” Amy explained, noting the newfound flexibility in their schedule.
Looking ahead, the Sirois family has ambitious plans, including a potential spot at the Minnesota State Fair in 2026, which could see them producing hundreds of thousands of marshmallows for the event’s massive crowds. “Landing a spot at the fair would be huge,” Amy said, envisioning the possibilities.
As The Minnesota Marshmallow continues to grow, the couple remains committed to their craft and community, proving that with hard work and a sprinkle of creativity, sweet dreams can indeed become a reality.
